Friday Night Dinner

Posted on

We had a really good one tonight! I made linguine with white clam sauce. It met all the criteria for a winning meal:

  • It was delicious!
  • It was healthy!
  • It took ~20 minutes to make!
  • and it was super cheap!

Sorry the picture isn’t great. Unless I have daylight, my pictures are never very pretty. Oh well, it still tastes great.

  • 6oz whole wheat linguine
  • 1 tablespoon butter
  • 2 tablespoons olive oil
  • half an onion, diced
  • 3 cloves minced garlic
  • 1/2 teaspoon red pepper flake
  • 1/2 tablespoon Old Bay
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 tablespoon lemon juice
  • 10oz can baby clams with juice
  • 1/4 cup white wine
  • Parmesan cheese
  • parsley

Cook pasta according to package directions. While pasta cooks, heat butter and olive oil over medium heat. Add onion and garlic and saute about 5 minutes. Add seasonings and saute 1 more minute. Add lemon juice, clams and wine. Simmer 5 minutes. Toss pasta with with clam sauce mixture. Garnish with Parmesan and parsley.

Brent really really loved it, which is kind of a big deal because Brent rarely gets really into his food the way I do, and thus, he often has no opinion on food other than that its edible.
