You may not have gathered the full awesomeness from Brent’s post, but last night’s dinner was so good!! The avocado buttermilk dressing on the salad is my absolute favorite dressing I have ever had! And, we have leftovers! So I made sure to pick up some salad to have tonight to use it up. Also the pasta was amazing. Brent’s right. I think it would be really great without the lobster as well (and way cheaper), but the lemony beets were amazing in it. Just the right burst of acidity. Yum! I wish I could eat it again tonight. 🙂
This month’s budget has really kind of been blown through, so we’re out of fun money thanks to last night’s meal, and the food budget is going to be tight too, so groceries have to be cheap this week and next. Here’s this week’s haul.
- bok choy
- salad mixes
- red lentils
- whole wheat spaghetti
All for a super cheap total of $39.62, plus Brent got eggs and coffee first thing this morning, so add like another $5 to that.
