Blech. We’re on our 6th or so day of 90+ degree weather. We finally had to break down and turn on the AC which I usually try to avoid. As such, we haven’t been eating much soup lately, which is our lunchtime staple. It’s just been too freaking hot! So what do we eat on Ozone Action Days like today? Mostly cold pasta salads similar to this:
Any combination of pasta, veggies and homemade vinaigrette will work and we’ve been eating some variation on that theme for two weeks or so. Feta and olives are fun and tasty additions, but not totally necessary. Our vinaigrette of choice: oil, red wine vinegar, spicy mustard, honey, salt and pepper. Whisk. Easiest thing ever.
